Recently Take Five Ltd welcomed the fresh month of April with the honour of attending David Tutera’s Wedding and Event Planning Experience. This opportunity involved a three-day course hosted at the Rosewood Bermuda in Tuckers Town, of which the gifted visionary David Tutera shared the tricks of the trade when it comes to Wedding and Event planning.

A highlight of the three days for Take Five Catering was creating an appetising selection of dishes for the second event held at St George’s landmark, The Unfinished Church. Anyone who attended this evening would agree that the sparkling chandeliers, pink glow of floral design and beautiful melody from local singer Joy T Barnum created an enchanting atmosphere, therefore our executive chef Matt Pridham carefully created a flavourful selection of food, befitting the sensory experience of this event.

The evening opened with a wide selection of canapes ranging from delicious endives with blood orange, pink grapefruit, olives and candied pecans, to local fish ceviche with ginger, seaweed salad and pea trundles, as well as local shitake mushroom and beef tenderloin with caramelized onion served on a house made focaccia crostini. There was something for everyone, no matter their dietary needs.

As the guests were seated and attended to by the helpful catering staff, the first course was brought out. This involved a fresh salad with local greens, pancetta, fresh fig, crispy daikon, red radish and topped with orchids in a Surinam cherry vinaigrette. The garnish of the orchid for this appetizer was a beautiful touch amongst the floral theme of the event.

When creating the perfect dinner dish, Matt chose local flavors that beautifully reflected Bermudian cuisine. Dinner was served as grilled rockfish on a bed of quinoa and lentils with golden beets and zucchini in a coconut prickly pear sauce. Needless to say, there were plenty of empty plates!

Take Five was honored to be a part of this incredible experience, as well as meeting many local and inspiring event planners and floral designers throughout the three-day course. This once in a life time experience was a great way to be more involved in Bermuda’s community and Take Five looks forward to collaborating with all the amazing planners, including David himself in the near future.
