Notes

There are three main characteristics that contribute to the overall flavour profile of any coffee: acidity, sweetness and bitterness. In a well-balanced coffee these three qualities work together, not masking or competing with each other, producing the “story” of the coffee for the drinker. A coffee may begin with a fruity plum acidity, supported by a bittersweet chocolate and completed by a sugar-toasted nut finish.

Roaster

Ricardo Morales, the Head Roaster at Devils Isle Coffee Company, brings over a decade of experience and passion to his role.

With notable achievements such as first place in the 2017 Guatemalan Latte Art Championship and top placements in the Guatemalan Barista Championship from 2017 to 2019, Ricardo’s expertise is well-recognized. He has also served as a judge in esteemed competitions like the Cup Of Excellence and the One of a Kind auction.

Since 2017, he has been a coffee consultant, offering services in roasting, quality control, and green coffee buying. His commitment to continuous learning is evident through his completion of specialized courses in Italy, Guatemala, and Mexico.

Ricardo’s leadership at Devils Isle Coffee Company ensures every cup of coffee is exceptional and fostering a culture of excellence within the team.

Eric is a Certified Technician for Crescendo Bunn, Astoria and Wega Espresso Machines and has many years of experience to service several other Espresso Machine brands such as La Marzocco, La Cimbali, Faema and Rancilio. He is also a brilliant technician when it comes to repair and maintenance of coffee mills.  On top of his technical skills Eric has acquired skills in roasting and cupping coffee, participated in competitions such as the World Barista Championship and is very passionate about quality control, which is why he loves to train baristas to deliver the best possible product in one cup.
